One of Josie’s retirement gifts to us was her DELICIOUS Belgian Lemon Teacake recipe AND since it’s the season of giving, we have decided to share it with you all! Be the favourite at Christmas lunch this year and whip this bad boy out, you won’t regret it!

Pan size – 24cm wide
DOUGH INGREDIENTS
1.5 cups self-raising flour
¾ cup caster sugar
90g butter
2 small eggs, lightly beaten
FILLING INGREDIENTS
1/3 cup of lemon juice
¾ cup of sugar
2 small eggs
90g butter, chopped
METHOD
1. Preheat oven to moderate 180°C. Brush a 17cm shallow tin with melted butter or oil and line the base of the tin with baking paper.
2. Sift self-raising flour into bowl, add sugar and stir well to combine. Add butter and rub in with finger tips until mixture resembles fine breadcrumbs. Make a well in the centre and stir in eggs to make a soft dough.
3. Combine filling ingredients together by placing them all in a small pan. Stir consistently over a low heat until mixture boils and thickens.
4. Press two-thirds of the dough into the prepared tin and pour over hot filling. Crumble small pieces of the remaining pastry over the lemon filling. Bake for 30 minutes and cool in tin and sprinkle icing sugar over the top.
